Kitchen sink (SUGAR FREE!) banana bread

I decided to play around to try to come up with a sugar-free sweet treat. I really despise bananas, but Jude's "mmm!-ing" and my hubby's, "This tastes like Starbucks!" comments led me to believe that it turned out quite well. I call it "Kitchen sink banana bread" because I really just went through my cabinets and threw in everything but the kitchen sink!

Here's what I used...
~2.5 overripe bananas (NEVER throw out brown bananas! Freeze those bad boys!)
1 egg
2.5 tbsp olive oil
1 tbsp honey
1/4 c milk
1 1/4 c flour
1 tsp baking soda
1 tsp cinnamon
1 tsp vanilla
Roughly 1/4 c? apple sauce... I made my own by simmering diced apples with cinnamon and a wee bit of honey over low heat until I could mash it up
A couple tiny boxes of raisins
A handful of old fashioned oats

Preheat oven to 350 and grease a loaf pan. Combine applesauce, bananas, oil, honey, vanilla, cinnamon, and milk in a large bowl. Mix well. Add egg and mix. Add flour, oats, and baking soda and stir until combined. Add raisins, if desired. Pour mixture into pan and bake about 35 min. The mixtuer will likely only fill about half the loaf pan (height wise) but you can double the recipe, if you'd like!

I drizzled the finish product with a bit more honey and served it to my anxious little guy. He loved it!

I forgot to add - you can basically add ANYTHING you want to this! You can't really mess it up. So if you have extra pears laying around - throw them in! Dried fruits? Try those! Have fun experimenting!

  3. Hi there! Overripe bananas are sweeter and mushier (easier to work with), but I don't think using plain old bananas would do any harm. You might try taking the peel off first and letting them sit at room temp for a bit to brown and soften. Good luck!

  7. Thank you so much for this fantastic recipe - I had been trawling the internet looking for a sugar free banana bread recipe and stumbled across your blog.
    From your recipe I made muffins (organic), followed your tip about making my own applesauce (I added 1 dsp of honey and 1/2 tsp of cinnamon and then blended it in a food processor), I used whole wheat spelt flour & oats, I added 1 tsp of baking powder (gluten and aluminum free), and I warmed the milk and then added 1 tsp of bicarb (a Tessa Kiros tip) and added that last.
    I cooked them at 170 degrees celcius (I'm Australian!) for 22 mins, fan forced. I made them for my friend who has just been diagnosed with brain cancer (she's 35!) whose on a sugar free, low-fat diet. She said they were the best she's had since she changed her diet. Thank you for this absolutely fantastic recipe again. Bw Suzannah

  8. I am making this now as a tasty, non hyper treat for my kiddies! As a Naturopathic Doctor, I love finding these healthier options! I am going to substitute the white flour for whole wheat or kamut. yummy yummy!

  9. This was awesome :D I was googling a sugar-free banana bread, something healthier for my grandparents and the rest of my family, and I'm so glad I found yours! It was so moist and the sweetness was just perfect!

    I used whole wheat flour, three huge bananas because I wanted it egg-free , and sweet potato puree (with ginger) instead of applesauce. Topped with walnuts, rolled oats and choc chips. It was baked in my pie pan so it was a delicious banana cake instead =)

    Most of it ended in my belly due to my OVER-excitement of having something baked successfully by my hands! Thanks for the recipe :D

  10. It's in the oven! I used a mix of kamut and whole wheat flour, chopped up a peach, and added oats, a few chopped nuts and dried fruit and a bit of chopped 85% cocoa dark chocolate and used canola instead of olive oil. i omitted the honey. fingers crossed!

  11. Well, it's moist and flavourful and not too bad! It would be better if I had of used the honey or something. I forgot to mention that I grated some carrot and zucchini in too. It would really good with a cream cheese icing, but I know the intent here is to eliminate/ reduce sugar. Overall a very good recipe. I baked for 35 minutes and it was the perfect amount of time.
