Homemade GREEN chicken nuggets!

Back in the kitchen!

It's so darn hot and humid here that I've really been avoiding my kitchen (how I love the grill and crockpot) and feeling sad about not cooking, so I sucked it up and went for it today!

I had some leftover roasted chicken from our "Christmas in July" dinner on Saturday so I decided to make some chicken nuggets.

Here's what you'll need:
~1 c cooked chicken - roasted, grilled, boiled, in the crockpot - whatever you prefer!
~1/4 c spinach (I used frozen)
~1/8 c bread crumbs (plus about 1/8 c more for rolling nuggets)
2 handfuls of mozzarella cheese
1 egg

Combine all ingredients in a food processor until they hold together and can be rolled into balls. Add more breadcrumbs if needed. If mixture dries out, add a teeny bit of olive oil. Form into balls and coat in bread crumbs. Flatten slightly to form "nuggets" and baked on an olive oil-coated cookie sheet at 375 for 15 min, turning once half-way through.

Jude isn't big chicken fan and refuses to eat spinach, but he's mmmmm-ing away as I type this. They're a hit! They are pretty similar to my broccoli bites but something new to try. Experiment with some other veggies and cheeses, too!

  2. I was looking for watermelon treats when I came across your blog. I have a 21month old daughter, a very sweet and destructive lil angel. But I have trouble feeding her. She refuses to eat anything apart from watermelons, apples and plain white rice!!! She just got over her noodles obsession (7 months it took)

    But your blog has given me hope again. I will try one of the recipes and let you know how it went. Your blog is absolutely brilliant!! Keep up the good work.

  3. These look fantastic! I am totally adding them to the meal planning this week. I just have one question: Does anyone know if these freeze well? If they do, I'm going to stop buying Tyson's chicken nuggets! :)

  4. These are great... I added some onions, carrots, spices, brussel sprouts, and spinach. Still worked great!

  6. Just curious - do they look green once they've been through the processor? My toddler might give it the side-eye if it even 'looks' funny to him.

    Just wanted to let you know that I tried these tonight with tofu instead of chicken and my little one gobbled them up! She doesn't eat much these days (meat is def. not one of her faves...which is why I opted for tofu)She loved them!
